Yummy Frozen Yogurt Pops

I found these cute little popsicle moulds at the dollar tree last week and couldn't wait to use 'em.
Here's how easy it is to make a yummy summer treat both kids & adults will love.....

What you need:
Popsicle moulds
2 or More flavors of yogurt (I find the tubes are easiest to use for this)
Freezer (Thank you Captain Obvious)

Snip the corner of the yogurt tube & fill each opening halfway with the first flavor, top off with second flavor. Tap the moulds on the counter so the yogurt will settle evenly. Freeze & enjoy.

Creamed Sweet Corn

Nothing says "Summer" like fresh sweet corn, but I get kinda bored with plain ol' corn on the cob, so tonight, I decided to cream it... Yes, I know, I'm such a rebel. (I have a few tattoos to prove it, too, none of which are corn related)
I've never made creamed corn from scratch, so I did what I usually do... I googled several recipes online... Then I "Frankenstein" a new recipe out of the aforementioned Googled recipes, try them and then share them with you guys.... It's totally legal, I googled it.
Enjoy!  : )
What you need:
4-6 Ears of fresh sweet corn (shucked & cleaned)
2-3 Tbsp Sugar (for boiling)
1 block of cream cheese (cubed)
1/4 cup (more or less, depending on desired consistency) Milk or half & half
Salt & freshly ground black pepper (to taste)
2 Tbsp Butter
2 Tbsp Sour cream
Bring a large stock pot full of water to a boil. Add the sugar. When water is at a full boil, carefully add the ears of corn. Cover with a lid & boil for 5-7 minutes. Drain corn. When the corn has cooled enough to handle, carefully cut it off the cob. Add cut corn + all other ingredients to a pan & simmer on low til it's smooth & creamy. You could also do this in a crockpot & substitute with a bag of frozen corn.
Note: Always allow frozen foods to come to room temp before adding to crockpot.

My Zombie Onions Update

These are some fo' real zombie onions!
After the post about my zombie "garden" a few weeks ago, I put the pot outside to get some direct sunlight and to harden them off... That was a mistake!
Our weather has been so incredibly hot that they withered up & died. (the fact that I forgot to water them probably didn't help much either)
So I decided to clip off the dried up pieces & bring 'em back inside & try again.
I really didn't have much hope that they would come back from the dead again, but much to my amazement, they did... With great ferocity... ZOMBIES!!!

The pic shown here, is only a week's worth of growth. I think it has something to do with the halogen bulbs in my over the sink fixture, but these things are growing like crazy.
It kinda looks like that one on the right is trying to turn on the garbage disposal.... Or needs some Cialis.  :\ 


Awesome $5.00 Dinner Recipe I found

Creamy Swiss Chicken Breasts

This recipe sounds so good & easy, I just had to share it!

Crab Strata

This is a great recipe I kind of threw together last night. I was going to make a quiche, and realized I had some hamburger buns that needed to be used up and hence, I invented the crab strata.... Technically, I didn't "invent" it but you know what I mean. What you need: 4 Hamburger buns or any kind of thick bread will work (torn into pieces) 1 pkg imitation crab meat 6 Eggs 1/2 Cup Milk 1 Cup Yellow, Red and Orange peppers (chopped) 1 Medium onion (chopped) 4 or 5 Pieces of American cheese 1/2 Sleeve crushed Ritz crackers Salt and pepper to taste Butter a 9x13 casserole dish. Add the torn pieces of bread, sprinkle the peppers and onions over the bread, add the Crab on top, in an even layer. Lightly beat eggs and milk and pour over the bread, peppers, onions and crab. Tear the cheese into triangles and cover the mixture, cover with crushed Ritz crackers. Bake @ 350 for 30 mins.
Enjoy!

Squash Casserole

This is an awesome recipe I tried on Monday night and it was sooo good I made it again last night.
What you need:
 2 or 3 Yellow squash (quartered)
 2 or 3 Zucchini (quartered)
 1 medium onion (sliced thinly)
 Butter or margarine to sautee the onion 2 Cloves of Garlic
 Salt & Pepper to taste
 1/4 cup sour cream
 2 or 3 Slices of American cheese (torn into pieces)
 1/2 Sleeve of Ritz crackers (crushed)

Directions:
 Sautee the onion (and garlic) in butter til it's translucent.
 Add the squash and zucchini, let simmer for about 15 or 20 mins til it's soft.
 Drain all the juices from the squash, zucchini & onion mixture. Add back to pan, add sour cream and slices of cheese, stir.
 Add to a buttered casserole dish and top with crushed Ritz crackers, bake @ 350 for 30 mins. Enjoy!!!

Sausage Pizza Stuffers

I had about ¼ of a jar of spaghetti sauce left and no idea what to do with it, so I rummaged through my fridge looking for something to throw together til I came up with this wonderful little concoction.

What you need:
1 can of flaky style biscuits
1 lb sausage or ground beef  (browned & drained)
About ¼ jar or a few Tbsp pasta sauce
Handfull of mozzarella cheese

Directions:
Add the tomato sauce to the browned and drained sausage.
Seperate the biscuits in half, so you have a top & a bottom.
 Using the palm of your hand, flatten each half of the biscuit (flour-ing your hand helps).
Spoon a small amount of the sausage/tomato sauce mixture onto the flattened biscuit, sprinkle with the cheese, place the other piece of flattened biscuit on top & close the edge with a fork or crimp it by hand.
Continue this with the rest of the biscuits 'til you've got them all stuffed & closed.
Pierce the tops with a fork to allow for venting.
Brush with olive oil or melted butter & cook according to package directions.
You can serve with a bit of the pasta sauce on the side for dipping.
